Chicken Nuggets

with Chicken

Get ready for One Potato's version of chicken nuggets. Baked, not fried, these nuggets are healthier but still have major crunch. They're also loads of fun to dunk in our dipping sauces. We double down on the crunch, adding sweet potato fries and crispy baked broccoli to the party. Fast food doesn't get more nutritious, or delicious than this.

Ingredients

  • Sweet potato fries

    Buttermilk marinated chicken
    (chicken marinated in herb-infused buttermilk)

    Flour seasoning
    (Corn flakes, flour, salt, sugar, dry marjoram, black pepper, dry thyme, paprika, oregano)

  • Broccoli 

    Dipping sauce (bbq sauce & buttermilk ranch)

Kids can help prepare the sweet potato fries and the broccoli.

Encouraging Picky Eaters:

Dipping is a great way to encourage kids to try new foods. Give them dollops of the ketchup and the dipping sauce and ask them to see how it changes the taste of the nuggets, the fries, and the broccoli.

Instructions

1Step One

Preheat the oven to 450 F.  Place the sweet potato fries onto one or two baking sheets (depending on how many fries you have), making sure to keep them in a single layer. Spray with cooking spray or drizzle some olive oil over the fries and toss to coat. Bake fries for 12 min, flip fries over and bake for an additional 5-10 min, or until golden brown. Remove from the oven and place them into a dry bowl. Sprinkle lightly with salt and toss to season evenly. Alternatively, fries can be air fried at 400 degree for 18-20 minutes.

2Step Two

Place seasoning into a large bowl. Drain excess buttermilk from chicken and cut into 1" x 2" chunks. Press 2-3 pieces at a time into the seasoning and turn to make sure that all sides are coated with the seasoning. Lightly oil a second baking sheet and place chicken in a single layer onto the baking sheet. Spray or brush the nuggets lightly with oil and place in the oven. Cook for 12-14 minutes, or until golden and firm to the touch.*

3Step Three

Place the broccoli florets in a bowl, sprinkle with salt and drizzle enough olive oil to coat. Toss to coat well, then place on a baking sheet and cook for 8-12 minutes, or until the broccoli is tender. Remove the sheet tray from the oven and place the broccoli back into the bowl.

4Step Four

Serve the chicken nuggets accompanied by the fries and  the crispy broccoli and the dipping sauce. Enjoy!
